Finger food for the World Cup!

The World Cup has finally arrived! After months of eager waiting, fans are now delighted as the first games of the competition kick off today and signify a month long of fantastic football. Now, along with your lager, stout, porter or (insert beer), you’ll surely be hankering after some nibbles that will keep you out of the kitchen and glued to the sofa whilst the games are ongoing. Luckily, we have just the snack for this tournament; home-made onion rings and dip!

Onion Rings

Ingredients:
2-3 big onions

130g flour

1 TL dried rosemary

½ tsp salt

¼ tsp pepper

¾ tsp ground garlic

1 tsp roasted paprikapowder

1 tbsp chili flakes

approx. 300ml Guinness beer

For the dip:

200g greek yoghurt

1 EL Dijon mustard

1 EL Guinness beer

1 EL honey

Others:

500ml sunflower oil

paper towels

Preparation method:

Peel onions and cut in 2cm thick Rings. Seperate inner from outer rings.

Mix flour, rosemary, salt, pepper, garlic, paprika powder and chili flakes in a bowl. Slowly pour in beer and whisk until you got a thicker consistency.

Heat oil in a robust pot. Check if oil is hot by dipping in a wooden spoon, if there’s little bubbles at the sides then the oil is warm enough. (Be careful, it’s hoooot!!)

Cover 2-3 onion rings in dough and put slowly into the oil. Fry from both sides until crispy and golden brown (around 1 minute). Take out carefully with a fork and place on paper kitchen towl so any excess fat is soaked up.

Mix all ingredients for the dip in a bowl and serve along with the onion rings.
